So when I cook, it's not always pretty, I don't always get it right. I never wear a shirt that I can't get messy when I cook. I wear old baggy tee shirts. So, I was making quinoa sliders (I usually do it well) but this time they were messy and didn't go as planned. I found the recipe somewhere and forgot where but I changed it! So below are some pictures of how cooking is messy, then the recipe itself!
So my ingredients were,
Garlic 1/5 of a bulb
Quinoa (1 cup dried)
Quinoa flour
1 egg
Slider buns
Bread crunbs (I mix mine with parmesian and garlic and save it for spaghetti)
Chickpeas (soaked in water with fresh lemon and garlic) I bought dried chickpeas and forgot to soak them, so my recipe was very delayed. I made a bunch and have plenty left over to make hummus.
Mushrooms (3)
Chia seeds
You could also add carrots and other veggies to taste!
So you cook the quinoa, 2 cups of water to 1 cup of quinoa, put both in a pot and bring it to a boil, then put on low, cover and let it cook for 10-15 minutes.
Then let the quinoa sit in the fridge in a different bowl to cool.
While it's cooling (hopefully you are using fresh chickpeas, not dried like me, if you are using dried set these up 2-3 hours before you cook.)
Chop up your mushrooms and put them in a bowl, get your fresh garlic, chia seeds, other veggies, quinoa flour, and bread crumbs in the bowl and mix well.
When the quinoa is cool add it to the other bowl, then add your egg and mix it really well.
Heat a pan add your favorite cooking oil
Make your quinoa mixture into small patties and place in the pan and cook well, they should cook enough and be able to flip and golden brown.
Then when they are done put them on the slider bun and you can serve them with
Chiptole mayo (I've never tried it but it's a suggestion)
Provolone cheese (super yummy)
Avacado slices (NOM NOM NOM)
And with the leftovers you can add some cheese and make quinoa scramble! Some of the patties will fall apart, so just mix it up and throw it in a bowl!
